Carob trees grow in between olives giving olive groves a special dark green color establishing age-old traditions of biodiversity that affect not only the color of the groves but the health and nutritional content of both olive oil and carob and the resulting syrup.  

Canaan Carob Syrup is a natural sweetener that is used to give an exotic fruity flavor to cooked meats or vegetables, and stews. It can also be used as a healthier alternative to sugar in sweets.

Zaatar

 

 

Za’atar is Palestine’s most beloved spice mix. For ages, za’atar and olive oil - with fresh whole grain bread - has been the daily breakfast for Palestinian families.

Canaan’s original za’atar mix is made of oregano, roasted sesame seeds, and sumac. Our za’atar is prepared in women’s cooperatives using home-grown ingredients from Palestinian farmers.

Za’atar is aromatic with oregano, a bit acidic from the sumac, with the nutty flavor of roasted sesame seeds. Combine za’atar with olive oil for a marinade that springs to life with flavor. You may use za’atar as a rub for chicken or with oil as a dressing on salads. Sprinkle it over cream cheese, yogurt, or on toasted bread with olive oil.

Maftoul

 

 

Maftoul is the traditional Palestinian food made of whole wheat bulgur and flour. This is slow food in its original form, made by women’s cooperatives.

The process starts with bulgur wheat spread on a tray, misted with water, then sprinkled with whole wheat flour and hand rolled into tiny pearls. This process is repeated many times to produce the little beads we call maftoul. Maftoul is steamed in a colander over boiling water, then sun dried to share with people across the world.

Traditionally, maftoul is prepared with chicken stock, tomato sauce and chickpeas, a favorite Palestinian winter meal. You may prepare it to compliment your favorite stew or as salad with fresh herbs and dried fruits. Maftoul has a lovely texture and great nutritional value.

Freekeh

 

 

Freekeh is an ancient Palestinian grain that is now a hot new super food. This rediscovered specialty is flame-roasted green wheat, sun-dried, then crushed. The wheat is harvested green, halting the process of starch formation. Freekeh is low in carbohydrates while high in fiber and protein.

Canaan’s organic freekeh is a tasty smoky grain with real texture. It can be eaten on its own or prepared as a salad that is full of flavor. Added to soups and stews, it provides delicious extra texture. Serve it as a side dish with roasted vegetables or meats. Our freekeh is versatile, super-healthy and tasty.
